Ropa Vieja | Cuban Shredded Beef



## Tools
* WestBend Versatility Cooker
* Cutting board
* Chef’s Knife
* Various medium bowls (for mise en place)
* Tongs
* Wooden Spoon

## Ingredients
* 2 lb Flank Steak
* 1 28oz can whole peeled tomato (core removed)
* 1 white onion circles
* 2 bell peppers chopped
* 2 sliced jalapenos
* 1/2 cup red wine
* 2 tsp cumin seeds
* 2 tsp paprika
* 2 tsp cayenne pepper
* 2 tsp oregano
* Bay Leaf
* Salt
* Pepper

## Preparation
1. Heat up 1 TBSP of oil on high
2. Brown flank steak 7 minutes a side and rest on a plate
3. Cook onions and both peppers for 15 minutes on medium low
4. Add garlic for 5 minutes
5. Add wine and cook until evaporated
6. Add spices and mix to coat
7. Add core-removed tomatoes to pan and mix to combine
8. Nestle in the browned flank steak and cover
9. Place in a 250 degree oven for 2.5 hours
10. It will likely fall apart at that time, but if not – use the tongs to pull apart !!
