So your garden is overrun with cucumbers and your tomatoes are just starting so let’s make some salsa to add to your food storage at your preppers retreat. Got a summer party to attend and no time to prepare anything bring some cheese salsa! One pint salsa and 1/2 block of your self stable box cheese becomes ready made dip.
Bexar’s Salsa
50 Roma or San Marzano Tomatoes (or blanch, peeled and chopped)
10 Green Peppers chopped
8 large cucumbers chopped
5 onions chopped
15 Jalapeno’s chopped (4-5 cups)
3 tsp cumin
2 tbsp salt
2 tsp pepper
6 cloves or 3 tbsp chopped garlic
1 cup Balsamic or Red Wine Vinegar
1/2 cup white vinegar
2 tbsp dried or 3-4 tbsp finely chopped fresh oregano
Bring to boil and simmer for 20 minutes. Jar and process in boiling water bath for 20 minutes pints or jelly jars or 40 minutes for quarts. Taste better after sitting for 2 weeks.

i got over 200 pounds of tomatoes last year from an 8×4 raised garden box (14 feet high) so that strainer was getting a workout – as was i since i don't have the motor, but i took all the stuff left over and chucked it in the compost… then this spring i had loads of little sprouts, all white… turned it a few times, then spread it on the beds… i have a FOREST of tomatoes… and just can't bear to pull them out, so i think the strainer will be taken out again this year – thanks bexar – no matter how much salsa you make, you'll always wish you'd made more.

I just bought this Victorio food strainer, the 4 extra cone blades and the motor after watching another of your videos. I have not used it yet, but it will get a workout soon doing tons of tomatoes.
Where did you get the motor for the food mill? I have a "Squeezo" food mill. Would that motor work for mine??

What a great video and recipe. Will have to make it. I always make fresh salsa but to just walk into the basement and get a jar will be magical. over here in Germany you can't get good salsa… and if you get salsa it has cilantro in it and we do not like that.
